How to store grapes

Between late summer and early autumn, the queen of the table is undoubtedly the grape! There are hundreds of varieties: sweet, sour, sour, large, small, black, white beans… which one do you prefer?

Beyond tastes, however, one thing is certain: keeping it can seem like a challenge. It is, in fact, very sugary fruit and this facilitates its ripening process. The trick is to buy a little at a time, but we’ve gathered some tips to keep them fresh and good for longer, even at the cost of some (delicious) transformation.

Grapes can be kept in the refrigerator for about a week. Here are some other helpful tips to ensure a long shelf life:

  • As soon as you shop, remove any berries that are not in perfect condition, which have reached excessive ripeness, but do not wash the bunches immediately if you do not consume them immediately.
  • The refrigerator is the best place to store grapes because heat is its enemy: if you wait too long it risks rotting or losing some of its organoleptic properties.
  • Avoid placing it in close contact with other foods, as it easily absorbs odors.
  • Would you like to freeze it? Better not, since, once thawed, it would lose its compactness and it would no longer be good.

A sweet recipe: grapes in alcohol

If, on the other hand, you have a lot of grapes to keep for the whole winter, we advise you to make it in alcohol and keep it for as long as you want! For grapes in alcohol, you only need:

  • 250 g of white grapes
  • 80 g of sugar
  • 0.5 l of grappa
  • 1 cinnamon stick
  • 1 clove

The ideal grape for this preparation is the white one, with particularly large and tasty berries. Wash and detach the grapes from the bunch, taking care to leave a piece of stem, then let them air dry for a day. Sterilize the jars in boiling water and let them dry. After that, pour the berries , adding the clove and cinnamon stick, completing with the grappa.

Melt the sugar in a pan with enough water to make a thick syrup, and pour it into the jar until it is completely covered. Then, you can close hermetically and you have to let it macerate in a cool dark place for about two months before you can consume the grapes. Occasionally, during the maceration period, it is necessary to shake the jar to prevent the berries from sticking.
